Tuna Pasta (Baasto Toonno) Pâtes au Thon مكرونة بالتونة
We crave this pasta. That is the only way to describe it. You know when you crave a certain food, nothing else satisfies. Whatever else you eat will fill your stomach but you will still feel hungry in a strange way. Have you ever foraged in the kitchen not long after a meal? Know that you are not alone.
The craving for this pasta has no schedule and it just hits us without warning. But who needs advanced warning for tuna pasta when the ingredients are always available in our pantry. No basil? Substitute with parsley or cilantro. Parsley, in fact, is what Italians use in this dish but we like it with basil. That preference followed us from Somalia. No parmesan cheese? No problem. The dish will still taste great.
W have seen recipes for tuna pasta where the pasta swims in a sea of red tomato sauce. Tastes vary. We like to taste chunks of fresh tomatoes, olives, tuna, garlic, fresh basil, extra virgin olive oil, and parmesan cheese. It is simple, it is fresh, and it is delicious.
The recipe calls for peeled and seeded tomatoes . It is a personal preference and you can definitely use the whole tomato. We do not always peel and seed tomatoes, especially when we are making hearty stews and soups.

Ingredients:
- 5 tablespoons (74 milliliters) olive oil
- 3 garlic cloves
- 4 tomatoes (diced, peeled, seeded)
- 6 ounces canned tuna
- 15 Kalamata olives (pitted, sliced)
- 20 Pimiento olives
- 2 teaspoons (10 milliliters) chicken bouillon powder – or 1 teaspoon salt
- ⅓ cup tomato juices strained from the seeds – or ⅓ cup water
- 1 chili pepper (chopped, seeded)
- 2 teaspoons (10 milliliters) lemon juice
- 1 gallon (4 litres) water – for boiling the pasta
- 1 tablespoon (15 milliliters) salt
- ¾ pound (340 grams) spaghettini
Directions:
- Heat the oil in a skillet set over medium heat. Add the garlic, stir and then right away add the tomatoes and stir well. Cook for 5 minutes
- Flake the tuna and add to the pan. Stir well.
- Add the 2 types of olives, chicken bouillon and the tomato juices strained from the seeds. Stir well.
- Add the hot chili peppers and lemon juice and stir well.
- Bring the water to a boil, add the salt and then the pasta. Cook until the pasta is almost al dente. Reserve ½ cup of the pasta water, then drain the pasta.
- Add the pasta to the sauce.
- Add the fresh basil and pasta water then stir well.
- Add the parmesan cheese and stir.
- Add the olive oil and stir. Serve immediately.

- 15 oliifo madoow (kalamata) (laf lahayn, la jarjaray)
- 20 oliifo cagaara (pimiento)
- 2 qaaddo yar (10 mililitir) budo maraq digaag
- ⅓ koob biyo laga miiray miraha yaanyada – ama ⅓ koob biyo
- 1 basbaas (jarjaran, miraha laga saaray)
- 2 qaaddo yar (10 mililitir) casiir liin dhanaan
- 1 gaalon (4 litir) biyo – baastada lagu kariyo
- 1 qaaddo weyn (15 mililitir) cusbo
- ¾ rodol (340 garaam) isbagetiini – baasto dhuudhuuban
Diyaarinta:
- Bir dab dhexdhexaad ah saaran, ku shub saliidda. Tuunta ku rid kaddibna walaaq. Isla markii yaanyada ku dar si fiicanna u walaaq. Kari muddo 5 daqiiqo.
- Ku dar toonnada la burburiyay, si fiicanna u walaaq.
- Ku dar labada nooc oliifo, maraq digaagga iyo biyaha yaanyada oo miraha laga miiray. Si fiican u walaaq.
- Ku dar basbaaska iyo liin dhanaanta, kaddibna walaaq.
- Biyaha karkari, kaddibna cusbada iyo baastada ku dar. Baastada kari ilaa bisaylka wax yar uga dhimanaado. Waxaa reebataa ½ koob biyaha baastada, kaddibna baastada biyaha ka miir.
- Baastada suugada ku kor dar.
- Reexaanta iyo biyaha baastada ku dar, kaddibna si fiican u walaaq.
- Farmaajada ku dar, kaddibna walaaq.
- Ku dar saliidda oliifada, kaddibna walaaq. Isla markii qaddin intay qaboobin.
Nous ne pouvons pas nous passer de ce plat. C’est la seule façon de le décrire. Vous savez quand vous avez une envie de quelque chose et rien d’autre ne peut vous satisfaire. Ce que vous mangez remplit votre estomac mais bizarrement vous avez quand même toujours faim. Est ce qu’il vous est déjà arrivé de retourner dans la cuisine peu de temps après un repas? Sachez que vous n’êtes pas seul.
L’envie de manger ce plat de pâte n’a pas d’horaires et elle survient sans prévenir. Mais les pâtes au thon n’ont pas besoin de prévenir car les ingrédients sont toujours en stock dans nos placards. Pas de basilic? Il suffit de le remplacer par du persil ou du coriandre. Le persil, en fait, est l’herbe utilisée par les Italiens pour ce plat mais nous préférons avec du basilic. Et ce depuis que nous étions en Somalie. Pas de parmesan? Pas de problème. Le plat sera toujours délicieux.
Nous avons vu des recettes de pâtes au thon où les pâtes nagent dans la sauce tomate. Les goûts varient. Nous aimons trouver des morceaux de tomates, des olives, du thon, de l’ail, du basilic frais, de l’huile d’olive vierge extra, et du parmesan. C’est simple, frais et délicieux.
La recette demande de peler et épépiner les tomates . C’est une préférence personnelle et vous pouvez utilisez une tomate entière si vous le souhaitez. Nous ne pelons pas systématiquement les tomates, surtout quand nous préparons des râgouts copieux et des soupes.

Ingrédients:

- 3 gousses d’ail
- 4 tomates (coupées en dés, , )
- 6 onces de thon en boite
- 15 olives Kalamata (dénoyautées, émincées)
- 20 olives pimiento
- 2 cuillères à café (10 ml) de poudre de bouillon de poulet – ou 1 cuillère à café de sel
- ⅓ mesure de jus de tomate égoutté des graines – ou ⅓ de mesure d’eau
- 1 piment chili (haché, )
- 2 cuillères à café (10 ml) de jus de citron
- 1 (4 litre) eau – pour cuire les pâtes
- 1 cuillère à soupe (15 ml) de sel
- ¾ (340 grammes) spaghettini
Instructions:
- Chauffez l’huile à feu moyen dans une poêle. Ajoutez l’ail, tournez, et ajoutez immédiatement les tomates et bien mélanger. Laissez cuire 5 minutes.
- Émiettez le thon et ajoutez à la poêle. Bien mélanger.
- Ajoutez les 2 types d’olive, le bouillon de poulet et le jus de tomate. Bien mélanger.
- Ajoutez le piment et le jus de citron. Mélangez.
- Faites bouillir l’eau, versez le sel puis les pâtes. Cuire les pâtes jusqu’à ce qu’elles soient presque al dente. Mettez de côté ½ mesure d’eau de cuisson, puis égouttez les pâtes.
- Ajoutez les pâtes à la sauce.
- Ajoutez le basilic frais et l’eau de cuisson et mélangez bien.
- Ajoutez le parmesan et mélangez.
- Ajoutez l’huile d’olive et mélangez. Servez tout de suite.

- 3 فص ثوم
- 4 طماطم (مقطع، مقشرة، منزوعة البذور)
- 6 أونصة سمك التونة
- 15 زيتون كالاماتا (منزوع النوى، مقطع شرائح)
- 20 زيتون اخضر
- 2 ملعقة صغيرة (10 مليلتر) مسحوق مرق الدجاج
- ⅓ كوب ماء مصفى من بذور الطماطم – او ⅓ كوب ماء
- 1 فلفل حار (مقطعة، منزوعة البذور)
- 2 ملعقة صغيرة (10 مليلتر) عسير ليمون
- 1 جالون (4 لتر) ماء – لسلق المكرونة
- 1 ملعقة كبيرة (15 مليلتر) ملح
- ¾ رطل (340 جرام) سباغيتيني – سباغيتي رفيعة
طريقة التحضير:
- يسخن الزيت في مقلاة على نار متوسطة. يضاف الثوم ويقلب ثم تضاف الطماطم مباشرة وتقلب جيدا. تطهى لمدة 5 دقائق
- تضاف التونة ويحرك جيدا
- يضاف الزيتون، مرق الدجاج والماء المصفى من بذور الطماطم ثم يحرك جيدا
- يضاف الفلفل الحار وعصير الليمون ثم يقلب جيدا
- يغلى الماء ثم يضاف الملح والاسباغيتيني ويقلب جيدا. تسلق المكرونة الى ان تصبح شبه ناضجة. يحتفظ بنصف كوب من ماء السلق ثم تصفى الاسباغيتيني من الماء
- تضاف الاسباغيتي للصوص
- يضاف الريحان وماء السلق ثم يقلب جيدا
- تضاف الجبنة ثم يقلب جيدا
- يضاف زيت الزيتون وتقلب ثم تقدم
