We like samosas and we also like mahamri. They are two classic favourites for Somalis as well as East Africans in general. Somalis like to pair the two together, nestling their samosas in mahamri blankets and biting the two together. If your Somali friend taught you how to do that, then so far so good. Your initiation, however, is not complete if you do not soak that mouthful with a big sip of shaah caddeeys (Somali tea with milk). Delicious!
We usually prepare a large batch of samosas and freeze them. When we run out and there is not much time to prepare both samosas and mahamri for our afternoon tea, we make mahamosa (mahamri + samosa). We came up with that idea and we coined the word. The two-in-one was an instant favourite for all those who tried it. For those who cannot let go of the samosa’s crunch, no worries, we have a solution. We placed a tortilla chip on top of the meat filling before folding the mahamosa. It worked like magic. Only, this was not an illusion but very real.

Mahamosa
Yields 24 Mahamosas
Ingredients:
- 1 recipe Mahamri Dough – click for recipe
- 1 recipe Samosa Beef Filling – see recipe below
The Mahamri Dough recipe requires 2 hours for the dough to rise, so it is best to start this recipe before the samosa beef filling.
Directions:
- Divide the dough into two equal pieces.
- Roll out the dough into ⅛ inch (⅓ cm) thickness.
- Cut into 4 inch (10 cm) squares. Gather up all the dough scraps and roll out again. Cut into squares.
- Place 2 teaspoons of the filling in the middle of each square.
- Wet two sides of the square. Flip the other side to make a triangle, then press with a fork to seal well.
- Using medium heat, deep fry in vegetable oil for 1½ minutes on each side.
Samosa Beef Filling
Ingredients:
- ¾ pound (340 grams) ground beef
- 2 garlic cloves (minced)
- 2 teaspoons (10 milliliters) coriander seeds (ground)
- 2 teaspoons (10 milliliters) xawaash bouillon powder – or ½ teaspoon xawaash spice mix + ¾ teaspoon salt
- ¼ teaspoon (1.25 milliliters) black pepper (ground)
- 1 medium onion (finely chopped)
- ½ cup (80 grams) fresh cilantro (chopped)
- 1 chili pepper (finely chopped) – or to taste
Directions:
- In a pan set over medium heat, place the ground beef, then add the garlic and stir well.
- Add the ground coriander, xawaash bouillon powder (or xawaash spice mix and salt) and black pepper.
- Cook for 10 minutes, or until no moisture remains.
- Let it cool down completely.
- Add the chopped onion.
- Add the cilantro and chopped, hot chili peppers and mix well.

Mukawinaadka:
- 1 soo’ Cajiin Qamdi – guji oo soo’da aad
- 1 soo’ Hilib Sambuus – soo’da boggaan hoostiisa ka fiirso
Diyaarinta:
- Cajiinka laba gabal isle’eg ka dhig.
- Burka u fidi buurni ⅛ inji (⅓ sentimitir).
- U jar laba jibaarane dhinacyadiisa yihiin 10 sentimitir. Gaballada cajiinka isku keen, kaddibna fidi oo jarjar.
- Laba qaaddo yar oo hilibka sambuuska kor saar burka dhex bartankiisa.
- Burka laba dhinac biyo ku qoy. Dhinaca qalalan soo rog, oo ka dhig sida sambuus oo kale. Dhinacyada si fiican isku dheji oo fargeeto ku riix.
- Ku shiil saliid caddeey adigoo isticmaalaysa dab dhexdhexaad ah. Dhinac walba shiil muddo 1½ daqiiqo.
Hilib Sambuus
Mukawinaadka:
- ¾ rodol (340 garaam) hilib lo\’aad shiidan
- 2 tuun (toon) (shiidan)
- 2 qaaddo yar (10 mililitir) kabsaro (shiidan)
- 2 qaaddo yar (10 mililitir) maraq xawaash – ama ½ qaaddo yar xawaash iyo ¾ qaaddo yar cusbo
- ¼ qaaddo yar (1.25 mililitir) filfil madoow (shiidan)
- 1 basal dhexdhexaad (aad loo yaryareeyay)
- ½ koob (80 garaam) kabsaro caleen (jarjaran)
- 1 basbaas (aad loo yaryareeyay) – ama inta aad jeceshahay
Diyaarinta:
- Bir dab dhexdhexaad saaran, hilibka ku rid. Tuunta ku dar, kaddibna si fiican u walaaq.

- Kari muddo 10 daqiiqo ama ilaa ay biyaha ka gursadaan.

- Ku dar kabsaro caleenta iyo basbaas cagaarka la jarjaray, si fiicanna u walaaq.
Nous aimons les samosas et nous aimons aussi les mahamri. Ce sont deux classiques favoris des Somalis et plus généralement des Africains de l’Est. Nous avons inventé le plat et nous avons créé son nom. Ce plat deux en un est devenu un favori pour tous ceux qui l’ont essayé. Pour ceux qui ne peuvent pas se passer du croustillant du samosa, pas d’inquiétude, nous avons une solution. Nous avons posé un chip tortilla sur la farce à la viande avant de fermer le mahamosa. Cela a marché comme un charme. Seulement, ce n’était pas une illusion, c’était bien vrai.

Mahamosa
Pour 24 mahamosas
Ingrédients:
- 1 recette de Pâte à Mahamri – cliquez pour voir la recette
- 1 recette de Farce de Samosa au Boeuf – voir la recette ci-dessous
Dans la recette pour la Pâte à Mahamri il faut 2 heures pour que la pâte lève, il vaut donc mieux la commencer avant la farce de samosa au boeuf.
Instructions:
- Coupez la pâte en deux morceaux égaux.
- Étalez la pâte à 1⁄8 pouce (3 mm) d’épaisseur.
- Coupez des carrés de 4 pouces (10 cm) de côté. Assemblez toutes les chutes de pâtes, étalez à nouveau et coupez des carrés supplémentaires.
- Posez 2 cuillères à café de farce au milieu de chaque carré.
- Humidifiez 2 côtés de chaque carré. Repliez un côté pour former un triangle, puis appuyez avec une fourchette sur les bords pour bien souder la pâte.
- Faites frire les mahamosas 1 minute 1⁄2 de chaque côté dans l’huile végétale chauffée à feu moyen.
Farce de Samosa au Boeuf
Ingrédients:
- ¾ (340 grammes) boeuf haché
- 2 gousses d’ail (hachées)
- 2 cuillères à café (10 ml) de graines de coriandre (moulues)
- 2 cuillères à café (10 ml) de Bouillon au Xawaash en poudre – ou 1⁄2 cuillères à café de poudre de xawaash + 3⁄4 de cuillères à café de sel
- ¼ cuillère à café (1.25 ml) de poivre noir (moulu)
- 1 moyen oignon (finement haché)
- ½ mesure (80 grammes) de coriandre frais (hachée)
- 1 piment chili (finement haché) – ou à volonté
Instructions:
- Mettre le boeuf haché et l’ail dans une poêle chauffée à feu moyen puis mélanger.
- Ajouter le coriandre en poudre, le bouillon au xawaash en poudre (ou du xawaash et du sel) et le poivre noir.
- Cuire 10 minutes, oui jusqu’à ce qu’il ne reste plus de jus.
- Laissez refroidir complètement.
- Ajouter l’oignon haché.
- Ajoutez le coriandre haché et le piment rouge et bien mélanger.

لعمل عدد 24 باخمبوسة
المقادير:
- 1 وصفة عجينة باخمري – اضغط هنا للوصفة
- 1 وصفة حشوة لحم للسمبوسة – الوصفة في اسفل الصفحة
طريقة التحضير:
- تقسم العجينة الى قطعتين
- تفرد العجينة الى سمك ⅓ سم
- تقطع الى مربعات 10 سم. تجمع قطع العجينة المتبقية وتفرد ثم تقطع الى مربعات
- توضع 2 ملعقة صغيرة من الحشوة وسط المربعات
- يبلل طرفي المربع ويقلب الجانب الآخر ويشكل على هيئة مثلث. تلصق جيدا وتضغط على الاطراف بالشوكة.
- تقلى في زيت نباتي على نار متوسطة لمدة دقيقة ونصف من كل جانب
حشوة لحم للسمبوسة
المقادير:
- ¾ رطل (340 جرام) لحم مفروم
- 2 فص ثوم (مفروم)
- 2 ملعقة صغيرة (10 مليلتر) كزبرة حبوب (مطحون)
- 2 ملعقة صغيرة (10 مليلتر) مرق حوائج – أو ½ ملعقة صغيرة حوائج و ¾ ملعقة صغيرة ملح
- ¼ ملعقة صغيرة (1.25 مليلتر) فلفل اسمر (مطحون)
- 1 بصل وسط (مفرومة ناعم)
- ½ كوب (80 جرام) كزبرة (مقطعة)
- 1 فلفل حار (مفرومة ناعم) – او حسب الذوق
طريقة التحضير:
- يوضع اللحم المفروم في مقلاة على نار متوسة ثم يضاف الثوم ويحرك جيدا.
- يضاف مسحوق الكمون ومسحوق مرق الحوائج (او بهارات حوائج وملح).
- يطهى لمدة 10 دقائق او حتى ينشف ماء اللحم.
- يترك ليبرد تماما.
- يضاف البصل المفروم.
- تضاف الكزبرة والفلفل الحار المقطع.

The link for the dough has 1/2 cup sugar. Do we still add this for the mahamosa dough? Or should be omit this because mahamosa isn’t a dessert. If we omit the sugar do we need to modify the dough recipe? Thank you!
The Mahamosa dough is not that sweet, but if you wish you can reduce the sugar. Somalis eat mashmash with samosas and mashmash is much sweeter than the Mahamosa dough.
I will make it as the recipe states I wasn’t sure if I had missed something about the sugar or maybe the link had misdirected me. I didn’t want to ruin it inadvertently by having the sugar in the mix. Thanks again! Do you have any Saudi inspired lamb dishes? It’s Ramadan now (as I’m sure you already know) and I’d love to make a nice comfort food for my husband.
I’m sorry! I forgot to ask: I prefer to bake vs. fry as I still haven’t figured out how to deep/flash fry with butter ghee (mainly I think I’m scared I will ruin it somehow!). I was thinking to bake these I would cook them at 400F for 20 minutes, turning over at 10 mins to evenly brown. Does that sound about right or do you think it would end with undercooked mahamosa?
We don’t recommend baking the Mahamosas.
Ok. Can you recommend a good oil/fat to substitute for the traditional frying oils like canola, vegetable, peanut and soy? Olive oil shouldn’t be heated to frying temps, so that’s out too Can I fry with butter ghee just turning more frequently? I’m sorry to be a pain! We just try to avoid eating bad fats. salam just a quick question. my in laws are coming over on sunday and i want to make something different. can i make it on saturday night and cook them sunday? i want to save time also the honey comb recipie can i make the dough sat night and make it sunday. please answer me asap as i am very nervous
You can prepare the dough and the filling for the Mahamousa the night before and refrigerate them. Let the dough rise for 2 hours before you refrigerate. On Sunday, take the dough out of the refrigerator, let it proof for 2 hours before filling and shaping. You can prepare the honeycomb bread on Saturday and bake it for just 15 minutes. The next day, finish baking it by placing it in a preheated oven for 10 minutes, then pour the syrup on top. Most important of all, relax.
