Bread Rolls (Rooti Jilicsan) خبز رولز

 

There are many reasons for baking your own bread. It tastes much better than store bought bread, has no preservatives, and the smell of freshly baked bread is priceless. You have full control of what goes into your bread: the amount of salt, sugar (if any), type of flour, etc… 

In Somalia, bread was baked at home for another reason. The few bakeries in Mogadishu regularly ran out of bread and that was enough incentive to bake your own bread. Other cities and towns had no bakeries, so baking bread at home was the only option.

Making homemade bread is quite simple and if you have kids at home, it is fun to have them help out in shaping the dough. It is a rewarding experience, one which we believe you will repeat very often. The milk and egg enriched rolls are very delicious and our favourite way to serve them is with jam and a cold glass of milk.

 

Il y a beaucoup d’avantages à faire son propre pain. Il a meilleur goût que le pain du supermarché, ne contient pas de conservateurs, et l’odeur du pain frais encore chaud est inimitable. Vous avez le contrôle de la composition de votre pain: la quantité de sel, de sucre (ou pas), le type de farine, etc…

En Somalie, le pain était cuit à la maison mais pour une autre raison. Les quelques boulangeries de Mogadishu manquaient de pain régulièrement ce qui était motivant pour cuire son propre pain. D’autres villes n’avaient aucune boulangerie, donc faire son pain soi-même était la seule option.

Faire du pain maison est très simple et si vous avez des enfants à la maison, c’est amusant pour eux d’aider à former la pâte. C’est une expérience enrichissante, nous pensons que nous la répéterons souvent. Les pains enrichis au lait et aux oeufs sont très délicieux et nous les préférons servis avec de la confiture et un verre de lait froid.

 

 

Plain Rolls

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements

Yields 6 rolls and 2 braided breads

Yeast activation
2 Tbsp (30 mL) Instant or active dry yeast
½ cup (118 mL) Water (slightly warm)
1 Tbsp (15 mL) Sugar

3 Tbsp (45 mL) Sugar

1 tsp (5 mL) Salt
1½ cups (355 mL) Warm water
¼ cup (59 mL) Olive oil
5 cups (700 g)) All-purpose flour

Oil for the bowl and the baking sheet

Garnish:
White and black sesame seeds or nigella seeds.

Pains nature

Ingrédients:

Pour 6 pains et deux pains tressés

Levain
2 cs (30 mL) de Levure Instantanée ou Levure Sèche
½ mesure (118 mL) d’Eau (tiède)
1 cs (15 mL) de Sucre

3 cs (45 mL) de Sucre
1 cc (5 mL) de Sel
1½ (355 mL) d’Eau Chaude
¼ de mesure (59 mL) d’Huile d’Olive
5 mesures (700 g) de Farine Blanche

Huile pour le bol et la plaque de cuisson

Garniture:
Graines de sésame blanc et noir ou graines de nigelle.

Steps for making the plain rolls (Diyaarinta rootiga caadiga ah) Étapes pour faire les petits pains

1. Activate the yeast. Mix the yeast with ½ cup water and 1 Tbsp sugar. Set aside for 10 minutes. Instant yeast does not need activation but we still recommend this step to ensure that the yeast you are using is still good. 2. Add all the other ingredients. 3. Mix well for 7 to 8 minutes or knead by hand for 10 to 12 minutes. 4. Place the dough in an oiled bowl. Cover and let rise for 1½ hours. 5. Roll out the dough into a cylindrical shape. Cut in half then divide one half into two and the other into three pieces.  Divide the smaller pieces in half, making six pieces. Shape them into balls and place them into an oiled baking pan. 6. Divide each of the larger pieces into 3. 7. Roll them out into 12-inch (30 cm) long ropes. 8. See the photo below for the braiding technique or watch the video. 9. Cover and let them rise for 1¼ hours. Brush with oil or milk or egg wash. Garnish with sesame or nigella seeds, if you wish. Bake in a preheated oven at 370°F/188°C for 20 to 25 minutes.

Si-fiican makiinadda ku-qas muddo 7 ilaa 8 daqiiqo ama gacan ku-rifaaq muddo 10 ilaa 12 daqiiqo. 4. Cajiinka dhex-dhig baaquli saliid la-mariyay. Dabool oo ha-fuuro muddo 1½ saacadood. 5. Cajiinka gacan ku-fidi. Laba gabal u-qaybi. Hal gabal saddex u-qaybi, gabalka kalena labo u-qaybi. Midka aad saddex u-qaybisay, mid walba labo u-sii qaybi. Ka-dhig lix xabbo rooti kuuskuusan. Saxan saliid la-mariyay saar. 6. Gaballada waaweyn midkiiba saddex gabal u-qaybi. 7. Gacanta ku-fidi oo ka-dhig gabal dhererkiisa yahay 12-inch (30 cm) ka-dhig. 8. Fiirso sawirka hoos ama ka-daawo fiidiyaha sida loo tidco. 9. Dabool mar kale oo ha-fuuro muddo 1 saac iyo rubi. Waxaa marisaa saliid, ama caano ama ukun. Haddaad rabtid, ku-qurxi sisin ama xabba soowdo. Ku-dub foorno kulaylkeeda yahay 370°F/188°C, muddo 20 ilaa 25 daqiiqo.

1. Activer la levure. Mélanger la levure avec ½ mesure d’eau et 1 cs de sucre. Mettre de côté pendant 10 minutes. La levure instantanée n’a pas besoin d’être activée mais nous recommandons cette étape pour être sûr que la levure soit toujours bonne. 2. Ajouter les autres ingrédients. 3. Bien mélanger pendant 7 à 8 minutes ou pétrir à la main pendant 10 ou 12 minutes. 4. Mettre la pâte dans un bol huilé. Couvrir et laisser lever pendant 1½ heure. 5. Étaler la pâte en cylindre. Couper en deux puis diviser une moitié en deux et l’autre en trois morceaux. Découper les petits morceaux en deux, faisant six morceaux. Former des boules et les placer sur une plaque de cuisson huilée. 6. Diviser les plus gros morceaux en 3. 7. Étaler en cordes de 12 pouces (30 cm) de long. 8. Voir la photo ci-dessous pour la technique de tressage ou regarder la vidéo. 9. Couvrir et laisser gonfler pendant 1¼ heure. Recouvrir avec de l’huile, du lait ou de l’oeuf. Garnir de graines de sésame ou de nigelle, si vous le souhaitez. Cuire dans un four préchauffé à 370°F/188°C pendant 20 à 25 minutes.

¼ de mesure (59 mL) de Beurre Doux (fondu)
1 Gros Oeuf
3 cs (45 mL) de Sucre
1 cc (5 mL) de Sel
3 mesures (420 g) de Farine Blanche

Garniture:

Garnish with sesame or nigella seeds, if you wish. Bake in a preheated oven at 370°F/188°C for 20 to 25 minutes.

Diviser en 6 parts égales. 6. Former des boules. 7. Placer les boules sur une plaque huilée. Couvrir et laisser gonfler pendant 1¼ heure. 8. Recouvrir avec du lait ou de l’oeuf avec un pinceau. 9. Garnir avec des graines de sésame ou de nigelle, si vous le souhaitez. Cuire dans un four préchauffé à 370°F/188°C pendant 20 à 25 minutes.

    asalamu aleikum.ما شاء الله لا قوة إلا بأ لله
    Many thanks for hard work you have dedicated to our community.I have always loved baking and I tried making bread several times but never turned out this good.the only problem I had was it stuck to the bottom eventhough I did spray the pan.could it been the egg wash? I want to try again hopefully it doesn’t stick
