We never had these cookies back in Somalia but, in recent years, we included them in our to-bake list for the holidays. Not only are they very beautiful but they are also a delight to munch on. The ground almonds (you can use other nuts) and the butter make them crumble in your mouth and you will need a lot of willpower not to eat them all before filling them with jam.

We baked these cookies again for the Eid al-Adha holiday and took them with us for the ritual family Eid gathering. Every Eid, we arrange to go to a restaurant for lunch. Getting more than 40 people to agree on a restaurant is not an easy task. The task is usually accomplished through some complex negotiations and a little arm-twisting. A near-consensus is almost always reached. What choice do the few hold-outs have other than eventually joining?

After lunch, we go to one of our homes (in turn each Eid) where we spend the rest of the afternoon and evening. There, we have tea, coffee, and we feast on sweets that we bring. Everyone looks forward to Xawaash treats: different kinds of cookies and cakes.

Linzer cookies are known to get soft after filling them with jam and it is best to serve them as soon as they are assembled. We did not want to spend our Eid morning baking cookies. So, for that reason, we baked them the night before and stored them in an airtight container. The next day, we filled them with jam just before leaving for the family gathering.

It is the delicious, baked goodies that help in convincing the few hold-outs to finally cave in. That is the arm-twisting we mentioned above. There is no bullying. Who would want to miss on cookies like these? They make our holidays brighter.

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements

 

Linzer Cookies:

  • 1½ cups (375 mL) Unsalted butter
  • 1½ cups (300 g) Granulated white sugar
  • 1 Large Egg
  • 2 tsp (10 mL) Baking powder
  • ¼ tsp (1.25 mL) Salt
  • 1 tsp (5 mL) Ground cinnamon
  • 1 Tbsp (15 mL) Vanilla extract
  • 1½ cups (150 g) Almonds (ground)
  • 3½ cups (490 g) All-purpose (plain) flour
  • ½ cup (70 g) Powdered sugar
  • ½ cup (118 mL) Jam – Or Nutella

 

Directions:

 

Steps for preparing the cookies

  1. Beat the butter and sugar for 5 minutes, then add the egg and beat again until well incorporated.
  2. Add the baking powder, salt, ground cinnamon and vanilla. Mix well.
  3. Add the ground almonds and flour. Mix until combined.
  4. Divide the dough into four.
  5. Wipe the surface with a wet cloth (this wilol help the cling film not to slide). Then roll each piece of dough between two sheets of cling wrap to a 1/8″ (about 1/2 cm) thickness. Freeze for 10 minutes.
  6. Use a cookie cutter to shape the cookies. Make an opening for the top cookies. Bake at 350°F/177°C for 12 to 14 minutes. Let them cool to room temperature.
  7. Spread strawberry jam or Nutella on the base cookies.
  8. Dust the top cookies with powdered sugar.
  9. Sandwich the cookies together and enjoy. Serve fresh. The cookies will soften because of the jam filling.

Mukawinaadka:

(QW waa qaaddo weyn – midda cuntada lagu cuno; qy waa qaaddo yar)
(1 koob = 237 mL = 2.4 dl; 1 QW = 15 mL; 1 qy = 5 mL)

 

Buskud Linsar:

  • 1½ koob (375 mL) Buuro aan cusbo lahayn
  • 1½ koob (300 g) Sokor cad
  • 1 Ukun , Weyn
  • 2 qy (10 mL) Beekin baawdar
  • ¼ qy (1.25 mL) Cusbo
  • 1 qy (5 mL) Qorfe shiidan
  • 1 QW (15 mL) Faniilla
  • 1½ koob (150 g) Aalmond (shiidan)
  • 3½ koob (490 g) Bur
  • ½ koob (70 g) Sokor la shiiday
  • ½ koob (118 mL) Malmalaaddo

 

Diyaarinta:

 

Diyaarinta buskudka

  1. Sokorta iyo buurada garaac muddo 5 daqiiqo. Ukunta ku dar, kaddibna sii garaac.
  2. Ku dar beekin bawdarka, cusbada, qorfaha shiidan iyo faniilada. Si fiican u qas.
  3. Ku dar lawska shiidan iyo burka, kaddibna qas.
  4. Cajiinka afar qaybood u qaybi.
  5. Miiska maro qoyan mari (bacda inay dhaqaaqin). Cajiinka laba bac dhexdooda ku fidi. Dhumucda ha le’ekaato 1/8″ (1/2 cm). Barafka geli muddo 10 daqiiqo.
  6. Cajiinka qaabka aad jeceshahay u jar. Nus ka mid ah kor ka duleeli. Ku dub foorno la sii kululeeyey 350°F/177°C muddo 12 -14 daqiiqo. Dhig ha qaboobaan.
  7. Buskudka aad hoos dhigeysid, mari malmalaaddo ama shakulaato Nutella.
  8. Buskudka aad kor saaraysid sokor shiidan ku shub.
  9. Labada buskud isku dheji. Isla maalintaas qaddin. Buskud malmalaaddada ayaa jilcin doonta.

Nous ne mangions jamais ces biscuits en Somalie mais, ces dernières années, nous les avons ajoutés à notre liste de pâtisseries de fête. Ils sont non seulement très jolis mais aussi délicieux à grignoter. La poudre d’amandes (vous pouvez utiliser d’autres noix) et le beurre les rendent fondants en bouche et il vous faudra beaucoup de volonté pour ne pas tous les manger avant même de les avoir garnis de confiture.

Nous avons réalisé ces biscuits pour la fête de l’Eid al-Adha et les avons amenés à notre rassemblement de famille rituel de l’Eid. A chaque Eid, nous allons déjeuner au restaurant. Il n’est pas facile pour 40 personnes de se mettre d’accord sur le choix d’un restaurant. Cette tâche s’accomplit d’habitude avec des négociations complexes et un peu de pression. Un quasi consensus est presque toujours atteint. Quel autre choix ont les opposants que d’éventuellement se rallier à la décision?

Après déjeuner, nous allons chez les uns les autres (chacun son tour à chaque Eid) où nous passons le reste de l’après midi et de la soirée. Là, nous prenons le thé, le café, et nous nous régalons de sucreries que chacun a amenées. Tout le monde attend toujours impatiemment les sucreries Xawaash: des biscuits et des gâteaux.

Les biscuits Linzer ramollissent une fois garnis de confiture donc il est préférable de les servir dès qu’ils sont assemblés. Nous ne voulions pas passer le matin de l’Eid à faire des biscuits. Donc, pour cette raison nous les avons cuits la veille et les avons mis dans une boite hermétique. Le lendemain, nous les avons garnis de confiture juste avant de partir à la réunion de famille.

Ce sont eux les biscuits délicieux qui aident à convaincre ceux qui rechignent à se rallier au choix du restaurant. C’est la pression que nous mentionnions plus haut. Personne n’est malmené. Qui accepterait de manquer de goûter des biscuits aussi bons? Ils rendent nos vacances plus joyeuses.

Ingrédients:

(cs est cuillère à soupe; cc est cuillère à café)
(1 mesure = 237 mL = 2.4 dl; 1 cs = 15 mL; 1 cc = 5 mL); mesures à ras

 

Biscuits Linzer:

  • 1½ mesures (375 mL) de Beurre Doux
  • 1½ mesures (300 g) de Sucre blanc en Poudre
  • 1 Gros Oeuf
  • 2 cc (10 mL) de Levure Chimique
  • ¼ cc (1.25 mL) de Sel
  • 1 cc (5 mL) de Cannelle en Poudre
  • 1 cs (15 mL) d’Extrait de Vanille
  • 1½ mesures (150 g) de Poudre d’Amande
  • 3½ mesures (490 g) de Farine Blanche
  • ½ mesure (70 g) de Sucre en Poudre
  • ½ mesure (118 mL) de Confiture – Ou de Nutella

 

Instructions:

 

Étapes pour préparer les biscuits

  1. Battre les oeufs et le sucre 5 minutes, puis ajouter l’oeuf et battre à nouveau pour bien l’incorporer.
  2. Ajouter la levure, le sel, la cannelle en poudre et la vanille. Bien mélanger.
  3. Ajouter la poudre d’amande et la farine. Bien incorporer au mélange.
  4. Couper la pâte en quatre morceaux.
  5. Mouiller le plan de travail avec un tissu humide (pour empêcher le film plastique de glisser). Puis étaler chaque morceau entre deux feuilles de film plastique à ⅛” d’épaisseur (environ ½ cm). Mettre au congélateur 10 minutes.
  6. Découper les biscuits avec un emporte-pièce. Découper une ouverture dans les biscuits du dessus. Cuire à 350°F/177°C pendant 12 à 14 minutes. Laisser refroidir à température ambiante.
  7. Étaler la confiture de fraises et le Nutella sur les biscuits du bas.
  8. Saupoudrer les biscuits du haut avec du sucre glace.
  9. Assembler les biscuits et déguster. Servir rapidement. La confiture va ramollir les biscuits.

زبدة غير مملحة كوب
سكر ابيض جم 300
بيض 1
بيكنج باودر ملعقة صغيرة 2
ملح ملعقة صغيرة ¼
قرفة مطحون ملعقة صغيرة 1
فانيليا ملعقة كبيرة 1
(لوز( مطحون جم 150
طحين ابيض متعدد الأغراض جم 490
مسحوق السكر/سكر بودرة جم 70
مربّى كوب ½

 

طريقة التحضير:

 

طريقة تحضير الكعك

تخفق الزبدة مع السكر لمدة 5 دقائق، ثم يضاف البيض ويخفق مرة اخرى -1
يضاف البيكنج بودر، الملح، مسحوق القرفة والفانيلا، يخلط جيدا -2
يضاف اللوز المطحون والطحين (الدقيق)، يخلط الى ان يتجانس -3
تقسم العجينة الى 4 قطع -4
يبلل السطح (حتى لا يتحرك البلاستك) وتفرد العجينة بين قطعتين من بلاستك التغليف الى 1/8 إنش (1/2 سم). توضع العجينة المفرودة في الفريزر لمدة 10 دقائق -5
تقطع العجينة الى الشكل المفضل لديكم وتخرم نصفها. يخبز على درجة حرارة 177 د.م. (350 ف) في فرن مسخن مسبقا لمدة 12- 14 دقيقة، يترك حتى يبرد -6
يدهن مربى على القطعة الكاملة -7
ترش القطع المخرومة بسكر بودرة -8
تلصق كل حبتين. يفضل تقديمه في نفس اليوم لأن المربى سوف يجعله لينا -9
