The moment we first tasted this garlic sauce, we knew we had to make it at home. Every time we go to a restaurant that serves it, we usually buy a few extra containers of the sauce for later use. The sauce, however, cannot be kept in the fridge for more than three days. This is one item you cannot stock on.

For us, grilled meats such as kebabs, shish taouk, and kofta, are not the same without a good garlic sauce. A while back, a family member invited us to a Mediterranean restaurant that served succulent, charcoal-grilled meats but when we were told that they did not have the garlic sauce, it felt like a big let-down. Like good guests, we hid our disappointment from our host, but that is one restaurant we won’t be going back to any time soon.

The garlic sauce, known as toum (Arabic ثوم), is traditionally made with loads of garlic, a good quantity of lemon juice, some salt, and a flavourless oil. Creating an emulsion out of these ingredients requires lots of practice and patience. If mastered, the results are amazing. For this post, we opted for an easier method that yields excellent results each and every time. If you know how to push the buttons on your blender, you can make this quick and easy garlic sauce. The oil, garlic and lemon juice are helped along by the addition of an egg white. An alternative to the egg is cornstarch (cooked with a little water) or mashed potatoes.

For those who cannot have raw egg, we included another quick and easy recipe that yields a sauce that is also delectable. It is made with mayonnaise (regular or light), drained non-fat yogurt, freshly-squeezed lemon juice, a little salt and garlic. The quantity of garlic is entirely up to you; just make sure the garlic has a paste-like consistency before adding it. Just this morning, we scooped a spoonful of the garlic sauce on top of ful mudammas and it elevated the dish to another level!

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements

 

Recipe #1:

  • 2 Garlic cloves
  • 1 Egg white
  • 1 Tbsp (15 mL) Lemon juice
  • 1½ tsp (7.5 mL) White vinegar
  • ¼ tsp (1.25 mL) Salt
  • ¾ cup (178 mL) Vegetable oil

Recipe #2:

  • ½ cup (118 mL) Mayonnaise
  • ½ cup (118 mL) Drained yogurt – Non-fat
  • 1 Garlic clove
  • 1 Tbsp (15 mL) Lemon juice
  • ¼ tsp (1.25 mL) Salt

 

Directions:

  1. Place all the ingredients, except the oil, in a blender. Blend for two minutes.
  2. While still blending, add the oil slowly.
  3. Blend for one more minute. Refrigerate for up to three days.

  2. Place all the ingredients in a bowl.
  3. Stir well until combined. Refrigerate for up to a week.

La première fois que nous avons goûté cette sauce à l’ail, nous avons su que nous devions la refaire à la maison. Chaque fois que nous allons dans un restaurant qui en sert, nous achetons quelques pots supplémentaires de sauce pour l’utiliser plus tard. La sauce, cependant, ne se conserve pas plus de trois jours au frigo. C’est un produit qui ne se conserve pas.

Pour nous, les viandes grillées telles que les kebabs, shish taouk, et kofta, ne sont pas les mêmes si elles ne sont pas accompagnées de sauce à l’ail. Il y longtemps, un membre de la famille nous a invité dans un restaurant méditerranéen qui servait de succulentes viandes grillées au charbon de bois mais quand nous avons appris qu’elle étaient servies sans sauce à l’ail, nous avons été vraiment déçus. En bons invités, nous avons caché notre déception à notre hôte, mais nous ne reviendrons pas dans ce restaurant de si tôt.

La sauce à l’ail, appelée toum (Arabic ثوم), se prépare avec de généreuses quantités d’ail, une bonne dose de jus de citron, du sel, et une huile neutre. Il faut beaucoup de patience et de pratique pour obtenir une émulsion avec ces ingrédients. Une fois le geste maîtrisé, les résultats sont étonnants. Pour cet article, nous avons choisi une méthode plus simple qui donne d’excellents résultats à tous les coups. Si vous savez utiliser les boutons de votre blender, vous êtes capables de faire cette sauce à l’ail rapide et facile. L’ajout de blanc d’oeuf vient aider à lier l’huile, l’ail et le jus de citron. L’oeuf peut être remplacé par de la fécule de maïs (cuite dans un peu d’eau) ou de la pomme de terre écrasée.

Pour ceux qui ne peuvent pas consommer d’oeuf cru, nous avons inclus une autre recette rapide et facile qui donne une sauce toute aussi délicieuse. Elle est faite à base de mayonnaise (normale ou allégée), du yaourt 0% égoutté, un jus de citron frais, un peu de sel et de l’ail. Vous pouvez utiliser autant d’ail que vous voulez; assurez vous juste que l’ail est réduit en purée avant de l’ajouter. Juste ce matin, nous avons ajouté une cuillère de sauce à l’ail sur du ful mudammas, ce qui a donné une dimension supérieure au plat!

  • ¼ cc (1.25 mL) de Sel

 

Instructions:

  1. Mettre tous les ingrédients, sauf l’huile, dans un blender. Mixer deux minutes.
  2. Ajouter l’huile petit à petit pendant le mixage.
  3. Mixer une minute de plus. Se conserve au réfrigérateur jusqu’à 3 jours.

  1. Écraser l’ail jusqu’à obtenir une pâte.
  2. Mettre les ingrédients dans un bol.

    i actually like the first one with raw egg can u use olive oil instead of vegitable oil…did you made that meat in charcoal or in oven is possible that you can show us..

      You can use regular olive oil. Extra virgin olive oil will make the garlic sauce bitter. We cooked the chicken on a gas barbeque. You can cook it on a stove top grill pan.

    Thanks for this recipe, i would like to make egg-less,but option of using mayonnaise is not an alternative as mayonnaise contains eggs.
