I was at the dealership to get a new set of tires and new brake pads for our car. That was a hefty amount and I grudgingly paid it. It left a sour taste in my mouth but I knew how to get rid of it. I headed back to the table where the free coffee and cookies were placed. Earlier, I had tasted one of the cookies and only one word could describe them: bliss. Usually, I never take more than one but this time I had a score to settle. I grabbed a cookie and went to the car, where Leila was waiting.

I told her about the bill before I gave her the cookie. I said, “They robbed us of $2,000 but I got back at them and took TWO cookies. Now, we’re even!” And we had a laugh about that.

I told Leila how the cookies reminded me of Mogadishu. I remembered walking in the downtown area as I regularly went to the British Council Library. As I approached the area, the smell of freshly baked cookies filled the air. That intoxicating smell came from Mariottini, the Italian bakery that was located at the back of Cinema Hamar. The cookies they made were legendary. That was amazing Mogadishu of our childhood.

I remembered even further back when my maternal grandfather, Mohamed Abdulle “Mulyuh”, would visit us on Fridays. We lived in Lambar 4 (KM 4) and he used to take a taxi to see us. I remembered running to greet him at the gate. He made sure that he always brought us something, mostly cookies from Mariottini. I have fond memories of him, memories that I will always cherish. Little things like that leave a lasting impression and we urge everyone to remember to give small treats to their nieces, nephews, grandchildren, etc. They will remember you fondly.

A week after our visit to the dealership, Leila surprised me with the cookies. She did her own experimenting, and being the genius she is, the cookies were amazing. When my sister Zahra, who is also a great cook, tasted the cookies, she said only one word, “Mariottini.”

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements

  • 1 cup(s) (200 g) Sugar
  • 1 cup(s) (250 mL) Butter (softened)
  • 1 Egg(s) , Large
  • 1 Tbsp (15 mL) Vanilla essence – Or extract
  • ½ cup(s) (118 mL) Whipping cream – Or ⅓ cup whole milk + 3 Tbsp butter
  • 3 cup(s) (420 g) All-purpose (plain) flour

Steps for preparing the cookies

  1. Put the sugar in the bowl of a mixer. Add the soft, unsalted butter.
  2. Beat on high speed for 5 minutes.
  3. Add the egg and beat on high for 2 minutes.
  4. Add the vanilla essence or extract and mix well.
  5. Add the whipping cream. Mix well on high for 1 minute. You can substitute the whipping cream with milk and butter.
  6. Add the flour.
  7. Start mixing on low. Increase the speed and mix on medium for 1 minute.
  8. Using a 16″ (40 cm) decorating bag with a Wilton # 6B decorating tip. Shape the cookies as shown in the video. Use an oiled baking sheet or use parchment paper.
  9. Bake in a preheated oven for 12 minutes at 400°F/204°C. Let them cool down for 5 minutes. Spread the flat side of half of the cookies with strawberry jam or chocolate spread. Sandwich with remaining cookies.

  8. Isticmaal kiishka qurxiska oo cabbirkiisa yahay 16″ (40 cm) iyo dublad Wilton #6B. Fiidiyaha ka daawo sida buskudka loogu sameeyo. Waxaa ku dul sameysaa bir saliid la mariyay ama mid xaanshi foorno saaran tahay.
  9. Ku dub foorno lasii kululeeyay 400°F/204°C muddo 12 daqiiqo. Dhig ha qaboobaan muddo 5 daqiiqo. Buskudka nuskiisa malmalaaddo ama shukulaato mari. Nuska kale ku dheji.

“Votre facture s’élève à $2,050. Comment souhaitez-vous régler, Monsieur?”

J’étais chez le concessionnaire pour changer les pneus et les plaquettes de frein de notre voiture. C’était une grosse somme et je l’ai payée à contrecoeur. Elle m’a laissé un goût amer dans la bouche mais je savais comment arranger tout ça. Je me suis dirigé vers la table où se trouvaient le café et les biscuits offerts. Plus tôt, J’avais goûté un biscuit et un seul mot pouvait le décrire: bonheur. D’habitude je n’en prends jamais plus d’un mais cette fois ci j’avais un compte à régler. J’ai attrapé un biscuit avant de retourner à la voiture, où Leila m’attendait.

Je lui ai annoncé la nouvelle pour la facture avant de lui donner le biscuit. J’ai dit: “Ils nous ont arnaqué de $2000 mais je me suis vengé, j’ai pris DEUX biscuits. Maintenant, nous sommes quitte!”. Et nous en avons ri.

J’ai dit à Leila que les biscuits me rappelaient Mogadishu. Je passais souvent par le centre car j’allais régulièrement à la Bibliothèque du British Council. Quand j’approchais de cette zone, l’air se remplissait de l’odeur de biscuits tous frais. Cette odeur enivrante émanait de Mariottini, la pâtisserie italienne qui se situait derrière le Cinéma Hamar. Les biscuits qu’ils faisaient étaient légendaires. C’était le Mogadishu extraordinaire de notre enfance.

Je me rappelle, il y a encore plus longtemps quand mon grand-père maternel, Mohamed Abdulle “Mulyuh”, nous rendait visite le vendredi. Nous habitions à Lambar 4 (KM 4) et il prenait toujours un taxi pour venir nous voir. Je me souviens que je courrais jusqu’au portail pour l’accueillir. Il s’assurait de toujours avoir quelque chose pour nous, le plus souvent des biscuits de chez Mariottini. Je garde de tendres souvenirs de lui, des souvenirs que je chérirai toujours. Les petites attentions comme celles-ci sont celles qui marquent durablement l’esprit et nous incitons chacun à penser à offrir des petits cadeaux à leurs nièces, neveux, petits-enfants, etc. Ils s’en rappelleront avec tendresse.

Une semaine après notre visite chez le concessionnaire, Leila m’a surpris avec les biscuits. Elle a fait sa propre expérimentation, et étant le génie qu’elle est, les biscuits étaient délicieux. Quand ma soeur Zahra, qui est aussi une excellente cuisinière, a goûté les biscuits, elle n’a dit qu’un mot:” Mariottini”.

Ingrédients:

(cs est cuillère à soupe; cc est cuillère à café)
(1 mesure = 237 mL = 2.4 dl; 1 cs = 15 mL; 1 cc = 5 mL); mesures à ras

 

  • 1 mesure (200 g) de Sucre
  • 1 mesure (250 mL) de Beurre (ramolli)
  • 1 Gros Oeuf
  • 1 cs (15 mL) d’Essence de vanille ou extrait
  • ½ mesure (118 mL) de Crème fouettée – ou ⅓ de mesure de Lait Entier + 3 cs de Beurre
  • 3 mesure (420 g) de Farine Blanche

Étapes de préparation des biscuits

  1. Mettre le sucre dans le bol du mixer. Ajouter le beurre doux ramolli.
  2. Battre à vitesse rapide pendant 5 minutes.
  3. Ajouter l’oeuf et battre rapidement pendant 2 minutes.
  4. Ajouter l’essence de vanille ou l’extrait et bien mélanger.
  5. Ajouter la crème fouettée. Bien mélanger à vitesse rapide pendant 1 minute. Vous pouvez remplacer la crème fouettée par du lait et du beurre.
  6. Ajouter la farine.
  7. Commencer par battre au ralenti. Augmenter la vitesse et mélanger à vitesse moyenne pendant 1 minute.
  8. Utiliser une poche à douille 16” (40 cm) munie d’une douille Wilton #6B. Étaler les biscuits en suivant la démonstration de la vidéo. Utiliser une plaque de cuisson graissée ou du papier cuisson.
  9. Cuire dans un four préchauffé à 400°F/204°C pendant 12 minutes. Laisser les biscuits refroidir 5 minutes. Étaler de la confiture de fraise ou de la pâte au chocolat sur la face lisse de la moitié des biscuits. Poser l’autre moitié dessus pour créer les sandwiches.

يوضع السكر والزبدة فى سلطانية العجان -1
يخفق بسرعة عالية لمدة 5 دقائق -2
يضاف البيض ويخفق لمدة دقيقتين -3
يضاف الفانيلا ويخلط -4
تضاف قشطة الخفق ويخلط جيدا لمدة دقيقة -5
يضاف الطحين -6
يبدأ بسرعة بطيئة، ثم ترفع سرعة الخلاط ويخلط بسرعة متوسطة لمدة دقيقة -7
يستعمل كيس حلواني مقاس 40 سم ورأس تزيين ويلتون رقم 6B، يشكل مثل الفيديو. يشكل على صينية فرن مدهونة او تستعمل ورق زبدة -8
يخبز في فرن مسخن مسبقا على حرارة 400°F او 204°C لمدة 12 دقيقة، ثم يترك ليبرد لمدة 5 دقائق، يلصق كل نصفين معا بالمربي -9

    I really want to make this. But what if I don’t know how to use the bag is there any other alternative way of making it without using the bag.

      You can use two teaspoons dipped in water to shape them as boats, or make round balls with your palms. Since the dough is sticky you will need to use flour or oil to shape the cookies. Also refrigerating the dough for one hour will make it firmer and easy to shape.

    So sorry about the bill I just got a car and i can understand the pain of fixing the odd bits. Just to let you know that I love your site and I always check it out. I was not born in somalia and your stories take me to a place that I have never been I ask Allah SWT to make our country peaceful so that we can enjoy our country as you guys surely did. Again I can not say thankyou enough.

    thank you for sharing the good and delicious recipies. I want to ask you about your wilton Cookie Press( you’ve used in Somali Biscuits (Buskud) and in Eid Cookies (Buskud) recipes) if it is a good quality one and how long you have it. I recently bought one the same like yours, it’s made with plastic an I doubt of his quality. I wait for your answer before return it to store, I don’t try it yet.
    I want to know if I can use your eid and somali buskud recipe to make cookies with wilton cookies press without problems.

      We used it only twice, so we cannot say much about it. There are electric ones nowadays and some like them better. They are also sturdier. However, when we make the Eid cookies we always like to use the decorative tips as shown in the video. Thank you very much for your comment.

    Hi, just wanted to ask that I only have a hand mixer and not the machine you have. How can I mix everything together? Can you please tell me the way to mix the ingridents by hand

      You can absolutely use a hand mixer and follow the same steps; even when mixing by hand it is the same thing. Cream the butter and sugar, you can use a hand whisk or a fork. Add the egg, beat well. Add vanilla and cream, mix well then add the flour and mix.

      Foster Clarks vanilla essence is alcohol free. You can buy it online or at Halal stores.
