Coconut Burfi (Qumbe - Zinoolo za Naazi) Burfi à la Noix de Coco حلاوة النارجيل

These coconut sweets are a cross between milk fudge (Peera or Caana Baraawe in Somali) and the White Coconut Sweets (Qumbe Cad). They were one of our favourite sweets in Brava, Somalia. Making these sweets used to be time-consuming since it required that milk be reduced significantly. We remember the very long time spent standing and stirring to prevent the milk from burning. 

Luckily with the availability of condensed milk, these sweets are quick and easy to make. If you cannot find sweetened condensed milk (for example certain parts of Somalia), combine sugar and three times as much milk and reduce the mixture to half, using very low heat.  

In this recipe custard powder is added towards the end of cooking. However, the traditional method uses all-purpose flour instead of the custard powder.

 

Ces bonbons à la noix de coco sont un mélange entre la confiture de lait (Peera ou Caana Baraawe en Somali) et les bonbons blancs à la noix de coco (Qumbe Cad). Ils étaient nos favoris à Brava en Somalie. Faire ces bonbons prenait beaucoup temps parce qu’il fallait d’abord faire réduire le lait. Nous nous rappelons les longs moments passés debout à tourner le lait pour l’empêcher de brûler.

Heureusement avec le lait condensé, ces bonbons sont rapides et faciles à faire. Si vous ne trouvez pas de lait condensé sucré (par exemple dans certaines régions de Somalie), mélangez du sucre et 3 fois la dose de lait et faire réduire le mélange de moitié à feu très doux.

Dans cette recette du flan en poudre est ajouté en fin de cuisson. Cependant la recette traditionnelle utilise de la farine blanche à la place de la poudre.

1 can (300 mL)                             Sweetened condensed milk
2 cups (180 g)                              Medium shredded coconut
1¼ cup (250 g)                             Granulated sugar
½ cup (125 mL)                            Unsalted butter
2 Tbsp (30 mL)                             Custard powder or all-purpose flour
1 tsp (5 mL)                                 Ground cardamom

2 koob (474 mL)                           Caano (2%)
1 gasac (300 mL)                          Caano la-gursiiyay oo sokor leh (“sweetened condensed milk”)
2 koob (180 g)                             Qumbe shiidan

2 QW (30 mL)                              ”Custard powder” ama bur cad

Ingrédients:

Pour 3 personnes

2 mesures (474 mL) de lait (2% / demi-écrémé)
1 boite (300 mL) de lait condensé sucré
2 mesures (180 g) de noix de coco râpée
1 ¼ de mesure (250 g) de sucre en poudre
½ mesure (125 mL) de beurre doux
2 cs (30 mL) de crème anglaise en poudre ou de farine blanche
1 cc (5 mL) de cardamome en poudre 

Steps for preparing the coconut burfi - Étapes pour préparer le burfi à la noix de coco

1. In a pot set on high heat, pour in the milk. 2. Add the condensed milk. 3.  Add the shredded coconut. 4.  Add the sugar. 5. Lower the heat to medium when it comes to a boil. 6. After 10 to 12 minutes, add the butter. 7.  Cover to control spattering. 8. After 20 minutes from the start, add the custard powder or all-purpose flour. 9. Just before turning off the heat, add the ground cardamom and stir well.

1. Digsi dab sare saaran waxaa ku-shubtaa caannaha. 2. Caanaha gasaca ku-dar. 3. Qumbaha ku-dar. 4. Sokorta ku-dar. 5. Markuu karo, dabka dhexdhexaad ka-dhig. 6. Toban daqiiqo kaddib, buurada  ku-dar. 7. Dabool hadduu fanfaniinka bato. 8. Labaatan daqiiqo kaddib markaad kariska bilowday, “Custard powder”-ka ku-dar. 9. Heylka ku-dar intaadan ka-dajinin, si-fiicanna u-walaaq.

1. Verser le lait dans une casserole chauffée à feu fort. 2. Ajouter le lait condensé. 3. Ajouter la noix de coco râpée. 4. Ajouter le sucre. 5. A la reprise de l’ébullition baisser le feu à puissance moyenne. 6. Après 10 ou 12 minutes, ajouter le beurre. 7. Couvrir pour éviter les éclaboussures. 8. Au bout de 20 minutes, ajouter la crème anglaise en poudre ou la farine. 9. Ajouter la cardamome et bien mélanger.

1. When it starts forming into a ball, you will know it is ready. 2. Transfer to a lightly-oiled surface. 3.  Flatten it with a rolling pin while still hot. 4.  Spread it to the desired thickness5. Cut it when it becomes cool to the touch. 6. Cut to the desired shape.

1. Markuu diyaar yahay, qumbaha wuu isku-imaanaayaa. 2. Meel aad saliid maristay ku-gadi. 3. Intuu kulul yahay fidi. 4. Buurnaanta aad jeceshahay u-fidi. 5. Jarjar markuu qaboobo. 6. Sida aad jeceshay u-jarjar.

1. Quand il commencer à former une boule, c’est le signe qu’il est prêt. 2. Verser le burfi sur une surface légèrement huilée. 3. Aplatir avec un rouleau à pâtisserie pendant qu’il est chaud. 4. L’étaler à l’épaisseur désirée. 5. Découper lorsqu’il devient froid au toucher. 6. Découper en morceaux selon ses goûts.

      There is approximately 1 1/4 cups sugar in the can of condensed milk. Therefore, you will need to use 2 1/2 cups sugar.

          Assuming that you measured every thing precisely, we are pretty sure it is the cooking time. It has to be cooked for 25 minutes and when it starts forming into a ball you will know it is ready. Thank you for the question.

    ‘Wallahi same thing happened to me so soft I think I know what happened the coconut was not dry like the one in ur video I couldn’t find one. So maybe if I dry the coconut itself then follow ur recipe I try that n let u know thanks a million

      Is it fresh coconut? If you are using fresh coconut then cook it for a longer period, because it contains extra moisture. Try Indian stores for dry and fresh coconut or bulk stores.

    I love qumbe I tried 2x still came out fudgey texture soft. I cooked a little longer nothing worked. Maybe its because I’m using sweetened coconut instead unsweetened? ???? I’m not giving up I’m gonna go to the India store n see if they have dry fresh kind. Anyways thanks for the help I will let you know if it comes out right .

      We love your determination. You must follow the recipe closely. It is very important to use unsweetened shredded dry coconut. Once you get the desired result then you can start experimenting. Thank you for the comment.

    I’m looking forward to making this for Eid. This recipe serves three. How many Qumbe’s does it average (10-15?) and if I were to make this for 20-30 people?

      Actually this recipe yields about 30 pieces. The “Serves 3″ was a mistake and we have corrected it now. You can double the recipe for 60 pieces and serve two for each person.

    Hi I’m fifteen years old. My parents are from somalia.MY mother and I came across your website and we love the food you cook so much. Your website has helped me and my mother alot because she wanted to get better at somali cooking and i wanted to learn how to. When I went to Marka in 2005 my late grandmother made the most delicious qumbe. My mother asked her how to make it but it never turned the way my grandmothers tasted. so when we saw your recipe for it we immediately wanted to try it. It was brown and after we laid it out it turned kind of hard. Can you please tell us what were doing wrong if you know?
    Thank you so much for this website. We are so grateful. And we love the pictures of somalia that you post. I only went to Marka but you showed me that the rest of Somalia is just as beautiful.

      From the description you gave us, it is clear that you cooked it for a longer time than you should have. Try again and time it for 25 minutes and make sure that the heat is not too high. Thank you for your question and best wishes to your mom.

    I love all of your recipes and the little background information/stories. Additionally I love the music selection and how you incorporated the theme to your little decoration for the qumbe, it’s awesome! Little things like that truly make the dish stand out even though your dishes are already outstanding by themselves. I haven’t tried making qumbe yet but I’ve done about 3 recipes of yours and they all came out wonderfully (this is the very first time I’ve been this successful with recipes) manshAllah thanks to you and your husband.       When we were experimenting with the recipe, we cooked it for 15 minutes. It was soft but it tasted very good. How can milk, condensed milk, butter and sugar not taste good? :) Make sure your cup measurements are the same and do not try to reduce the sugar. What sets it is the dry ingredient (custard powder) that is added towards the end. Eid Mubarak.

I made this during Eid and it turn out great and everybody loved in my family…now am planning on making large amount for a firend who is having party and I am confused about the measurements, any advice?       1/2 cup of butter is 115 grams. 1 tablespoon of custard powder weighs 10 grams, so 2 tablespoons will be 20 grams.

      It is supposed to be crumbly, not soft. If you did not cook it enough, it becomes soft.

      We already reduced the sugar, so you should not reduce anymore. Sugar is what glues everything together.
