Baked Macaroni (Makarooni Alfoorno) Gratin de Macaronis

 

This delicious dish might seem complicated at first glance, but it is really very easy when you break it down to its individual components. These are: the pasta, a meat sauce, and a béchamel sauce. The béchamel sauce is extremely easy if you follow the method we show in the video. There is no need to fight with lumps in your sauce.

It is an elegant dish and it is comfort food that would cheer you up. What we like most about this dish, is that you can make it ahead, refrigerate it, and bake it the next day. It is great when you invite guests and you don’t want to spend hours in the kitchen. It is also convenient, after a hard day’s work, to throw it in the oven as the family prepares for dinner.

When it comes to baked macaroni, there are two things that are important for us. We like a meaty sauce and we also like the dish to have a very generous amount of béchamel sauce. Those two things are what make the baked macaroni luxurious, indulgent, and soothing.

 

Ce plat délicieux peut sembler compliqué à première vue, mais il est vraiment très facile à faire quand on décompose chaque élément. Il y a les pâtes, la sauce à la viande, et une sauce béchamel. La sauce béchamel est extrêmement facile si vous suivez la méthode que nous montrons dans la vidéo. Il n’y a pas besoin de se débattre avec des grumeaux dans votre sauce.

C’est un plat élégant mais tout autant réconfortant. Ce que nous aimons le plus dans ce plat, c’est qu’on peut le faire la veille, le mettre au frais, et le cuire le lendemain. C’est parfait quand vous voulez recevoir des invités et que vous ne voulez pas passer des heures en cuisine. C’est aussi pratique, après une journée de travail, de le mettre au four pendant que la famille se prépare pour le dîner.

Pour le gratin de macaronis, il y a deux choses importantes pour nous. Nous aimons la sauce riche en viande et nous aimons aussi que le plat contienne une portion généreuse de sauce béchamel. Avec ces deux éléments, le gratin est riche, ravigotant et réconfortant.

 

Ingredients: 

Serves 14-16

Meat Sauce:
½ cup (118 mL)                          Olive oil
1                                              Onion (finely diced)
1 Tbsp (15 mL)                           Salt

4                                              Garlic cloves (minced)
1⅓ lb (600 g)                             Ground beef
6                                              Tomatoes (finely chopped)
2 Tbsp (30 mL)                           Tomato paste
2 Tbsp (30 mL)                           Fresh basil

 

Bechamel Sauce:
½ cup (118 mL)                          Olive oil
½ cup (125 mL)                          Butter
1 cup x 237 mL (140 g)                All-purpose flour
1½ litre                                     Milk (we used 2%)
2 tsp (10 mL)                             Salt
2 Tbsp (37.5 g)                           Sugar
¼ tsp (2.5 mL)                           Nutmeg
½ cup (50 g)                              Shredded cheese (use any kind you like) – optional

 

Macaroni
1.1 lb (500 g)                             Penne
5 litres                                      Water
6 Tbsp                                       Parmesan cheese (grated) – optional

5 litir                                       Biyo (baastada lagu kariyo)
1 Q.W.                                     Cusbo
6 Q.W.                                     Farmaajo Parmijaano (waa ka-dayn kartaa)

Ingrédients:

Pour 14 à 16 personnes

Sauce à la viande
½ mesure (118 mL) d’Huile d’Olive
1 Oignon coupés en dés très fins
1 cs (15 mL) de Sel
4 Gousses d’Ail hachées
1⅓ livre (600 g) de Boeuf Haché
6 Tomates Hachées
2 cs (30 mL) de Concentré de Tomates
2 cs (30 mL) de Basilic Frais

Béchamel
½ mesure (118 mL) d’Huile d’Olive

½ mesure (125 mL) de Beurre
1 mesure x 237 mL (140 g) de Farine blanche
1½ litre de Lait (nous avons utilisé du lait demi-écrémé)
2 cc (10 mL) de Sel
2 cs (37.5 g) de Sucre
¼ cc (2.5 mL) de Noix de Muscade
½ mesure (50 g) de Fromage Râpé (celui de votre choix)- optionnel

Macaroni
1.1 livre (500g) de Penne
5 litres d’Eau
6 cs de Parmesan râpé (optionnel)

Steps for preparing the meat sauce - Étapes pour préparer la sauce à la viande

1- In a pan set on medium heat, saute the diced onions in the olive oil & add the salt. Cook for 3 minutes  2- Add the minced garlic and cook for 2 more minutes. 3- Add the ground beef and brown the meat (about 10 min.). 4- Add the chopped tomatoes. 5- Add the tomato paste and cook for 10 minutes. 6- Add the fresh basil just before turning off the heat.

1- Bir dab dhexdhexaad ah saaran, waxaa isku dartaa basasha, saliidda iyo cusbada. 3 daqiiqo dallac.  2- Tuunta (toonta) ku-dar, 2 daqiiqo oo kale dallac. 3- Hilibka shiidan ku-rid. Kari ilaa uu xoogaa gaduuto (10 daqiiqo). 4- Yaanyada ku-dar. 5- Yaanyo shiishiidka ku-dar. Toban daqiiqo kari. 6- Reexaanta waxaa ku-dartaa markaad suugada dabka ka-dajin rabtid.

1. Dans une sauteuse chauffée à feu moyen, faire revenir l’oignon dans l’huile d’olive et ajouter le sel. Cuire 3 minutes. 2. Ajouter l’ail haché et cuire pendant 2 minutes. 3. Ajouter le boeuf haché, faire brunir la viande (environ 10 minutes). 4. Ajouter les tomates hachées. 5. Ajouter le concentré de tomate et cuire pendant 10 minutes. 6. Ajouter le basilic frais juste avant de couper le feu.

Steps for preparing the bechamel sauce - Étapes de préparation de la béchamel

1- In a 4L pot set on medium heat, add the butter & olive oil.  2- When the butter melts, add the flour. 3- Stir vigorously. Cook for 5 minutes until the mixtures foams and has a nutty smell. 4- Add 1 litre of milk and whisk vigorously. 5- Add the salt and stir constantly. 6- When the sauce starts to thicken, add ¼ litre milk. Add the remaining milk when it starts to thicken again. 7- Add the sugar. 8- Add the nutmeg. 9- Add the shredded cheese, if using.

1- Digsi (4L qaada) oo dab dhexdhexaad ah saaran, waxaa ku-shubtaa saliidda, buuradana ku-rid. 2- Markay buurada dhalaasho, burka ku-dar. 3- Si-fiican u-walaaq. Shan daqiiqo kari ilaa uu ka xumbeeyo, burkana soo carfo. 4- Caanha ku-shub, labahana si-fiican ugu walaaq. 5- Cusbada ku-dar. 6- Markuu beshameelka soo culusaan rabo, ¼ litir caano ku-dar. Haddana hadduu cuslaado, caanaha ku-dhamay. 7- Sokorta ku-dar. 8- Jowska ku-dar. 9- Farmaajada ku-dar, hadaad isticmaalaysid.

1. Dans une grande casserole (contenance 4L) sur feu moyen, mettre le beurre et l’huile d’olive. 2. Quand le beurre est fondu, ajouter la farine. 3. Touiller vigoureusement. Cuire 5 minutes jusqu’à ce que le mélange se mette à mousser et dégage un parfum de noisette. 4. Ajouter un litre de lait et fouetter vigoureusement. 5. Ajouter le sel tout en continuant à fouetter. 6. Lorsque la sauce commence à épaissir, ajouter ¼ de litre de lait. Ajouter le restant de lait lorsque la sauce épaissit à nouveau. 7. Ajouter le sucre. 8. Ajouter la noix de muscade. 9. Ajouter le fromage râpé, si utilisé.

Cooking the pasta - Cuisson des pâtes

1- Bring 5 litres of water to a boil and add 1 tablespoon of salt.  2- Add the penne and cook for 8 minutes. 3- The penne should be a little underdone as it will finish cooking in the oven.

1- Karkari 5 litir oo biyo, cusbana ku-dar.  2- Makaroonida ku-shub. 8 daqiiqo kari. 3- Makaroonida oo wax yar u-dhiman tahay ka-deji. Foornada ayay kusii bislaan doontaa.

1. Faire bouillir 5 litres d’eau avec un cuillère à café de sel. 2. Verser les pennes et cuire 8 minutes. 3. Les pennes doivent être à peine cuites, elles finiront de cuire dans le four.

Assembling the dish - Montage du plat

1- Spread of the meat sauce at the bottom of a 13″ x 9″ x 3″ baking dish.  2- Add some of the bechamel sauce to the cooked penne. 3- Make a layer of 1/2 the pasta. 4- Add a layer of the remaining meat sauce. 5- Sprinkle half of the grated cheese and some shredded cheese, if using. 6- Add a layer of the remaining pasta. 7- Pour the bechamel sauce on top. 8- Sprinkle the remainder of the grated cheese. 9- Bake at 380°F/193°C  for 45 minutes.

1-   oo suugada ku-fidi saxan cabbirkiisa yahay 13″ x 9″ x 3″. 2- Makaroonida aad karisay xoogaa beshameel ah ku-qas. 3- Makaroonida nuskeeda ku-fidi. 4- Suugada hartay ku-fidi. 5- Farmaajo kor uga-shub. 6- Makaroonida hartay ku-fidi. 7- Beshameelka ku-shub. 8- Farmaajada kor uga-shub. 9- Ku-dub foorno kulaylkeeda yahay 380°F/193°C muddo 45 daqiiqo.

1. Étaler le tiers de la sauce à la viande au fond d’un plat à gratin de 30cmx22cmx8cm. 2. Verser un peu de béchamel dans les pâtes cuites et remuer. 3. Ajouter une couche avec la moitié des pâtes. 4. Ajouter une couche avec le reste de sauce à la viande. 5. Saupoudrer la moitié du parmesan et la moitié du fromage râpé (si vous en utilisez). 6. Refaire une couche de pâtes avec le restant. 7. Verser la béchamel sur le dessus. 8. Saupoudrer avec le restant du parmesan râpé. 9. Cuire à 380°F/ 193°C pendant 45 minutes.

    Salam, It’s me again!!! I just wanted to say it turned out great and delicious. I always said when I learnt to cook the food most people only make when they have guests I would always make those type of food, when ever I fancied it.       There is no dough in the Baked Makaroni. Do you mean the bechamel sauce or are you talking about a different recipe?

    i wanted to use alferado suace instead of using Bechamel Sauce. is that okay or do i have to cook Bechamel sauce if i am making this.

      You can use alfredo sauce instead of bechamel sauce, but making bechamel is not at all difficult. Thank you.

    Asw this looks amazing and mine is in the fridge since i plan on baking it tomorrow for afur but i made one little mistake I layered it wrong with suugo first,then pasta dipped in bechamel sauce, then sugo again,cheese sprinkled on top, then the final layer of bechamel sauce.
    So I’m wondering if my baked macaroni will turn out fine without a second layer of pasta?
    ps. I love your website. May Allah give u the highest reaches of paradise and ramadan kareem!
    oh, and also do u guys have the somali tea recipe up on the website.If u do please post a link i couldn’t find it.If u don’t pls pls put it up. I love somali tea but mine always turns out not as good.

    All your recipes are delicious to look at. I tried pita bread, macroni and shawarma all turned out good.. I’m new in Toronto and which brand parmesan cheese you used I’m unable to find any halal parmesan. Jazakallah khair.
