Spinach, Carrots, & Potatoes (Mbogga/Isbinaasho) Epinards, Carottes, Pommes de Terre

 

This is a healthy and great-tasting vegetable dish made of spinach and chunky mashed potatoes and carrots. You can serve it as a side dish or you can eat it with bread, muufo, anjero, rice, or you can even toss it with fresh pasta. 

It is an easy dish and is nutritious at the same time. We boiled the carrots and potatoes whole, in order to preserve more nutritional value. However, if you are pressed for time, dice the potatoes and carrots before boiling. This will cut the cooking time by more than half. Remember though, that if the size of the dice is the same for the carrots and potatoes, then the potatoes will be done first.

In Somalia, and elsewhere in East Africa, this is a budget-friendly dish that helps stretch home finances up until the next pay cheque.

 

Il s’agit d’un plat de légumes sain et goûteux fait avec des épinards, de grosses pommes de terre et des carottes. Vous pouvez le servir comme plat d’accompagnement ou vous pouvez le manger avec du pain, du muufo, de l’anjero, du riz, ou vous pouvez même le mêler à des pâtes fraîches.

Ce plat est facile à réaliser et nourrissant en même temps. Nous avons bouilli les carottes et les pommes de terre entières, pour conserver plus de nutriments. Sinon, si vous êtes pressés par le temps, découper les pommes de terre et les carottes en cubes avant de les faire bouillir. Cela réduira le temps de cuisson de plus de moitié. N’oubliez pas cependant que si les morceaux de carottes et de pommes de terre ont la même taille, les pommes de terre seront cuites en premier.

En Somalie, et ailleurs en Afrique de l’Est, c’est un plat économique qui permet de faire durer les finances jusqu’au salaire suivant.

 

Ingredients: 

Serves 6 (as a side dish)

2                                                Potatoes
2                                                Carrots
2 litres                                        Water
¼ cup (59 mL)                              Olive oil
1                                                Onion (diced)
1 Tbsp (15 mL)                             Vegetable seasoning
2                                                Tomatoes (peeled & diced)
1 lb (454 g)                                  Spinach

2                                                Bataato (Baradho)
2                                                Karooto
2 litir                                          Biyo
¼ koob (59 mL)                            Saliidda oliivada
1                                                Basal (jarjaran)
1 Q.W. (15 mL)                             Maraq dajaaj
2                                                Yaanyo (fiiq oo jarjar)

1 lb (454 g)                                  Isbinaasho

Waxay ku-filan tahay 6 qofood (haddii cunnoyin kale lagu cunaayo)

Sida loo kariyay waxaa ka-fiirsataa ‘video’ga.

 

Ingrédients:

Pour 6 parts (en accompagnement)

2 Pommes de terre
2 Carottes
2 Litres d’Eau
¼ de mesure (59 mL) d’Huile d’Olive
1 Oignon haché
1 cs (15 mL) d’assaisonnement pour légumes (ex épices pour légumes)
2 Tomates (pelées et hachées)
1 livre (454 g) d’Epinards

 

Directions:

In a large pot set on medium heat, put the potatoes, carrots, and the water. Boil for 30-45 minutes (depending on the size of the carrots) or until the carrots become fork tender. Remove the carrots.

Continue boiling the potatoes for another 15-20 minutes (depending on the size of the potatoes) or until the potatoes become fork tender. Remove from the pot and let cool.

In a pan set on high heat, saute the onions in the olive oil for 3 minutes. Add the vegetable seasoning and cook for 3 more minutes, then add the tomatoes and cook for an additional 5 minutes.

Add the spinach, then cover and cook for 10 minutes. While the spinach is cooking, peel the potatoes and mash them with a fork then do the same with the carrots. Make the mash chunky.

After the spinach has cooked for 10 minutes, add the chunky mashed potatoes and carrots. Stir well, then cover and cook for 5 minutes.

 

Instructions:

Dans un grand faitout chauffé à feu moyen, mettre les pommes de terre, les carottes, et l’eau. Faire bouillir pendant 30 à 45 minutes (suivant la taille des carottes) ou jusqu’à ce que les carottes deviennent tendres sous la fourchette. Retirer les carottes.

Faire bouillir les pommes de terre 15 à 30 minutes de plus (suivant la taille des pommes de terre) ou jusqu’à ce que les pommes de terre soient tendres quand piquées avec une fourchette. Les retirer du faitout et laisser refroidir.

Dans une sauteuse chauffée à feu fort, faire sauter les oignons dans l’huile d’olive pendant 3 minutes. Ajouter l’assaisonnement pour légumes et cuire 3 minutes de plus, puis ajouter les tomates et cuire 5 minutes de plus.

Ajouter les épinards, couvrir et cuire pendant 10 minutes. Pendant que les épinards cuisent, peler les pommes de terre et écraser à la fourchette puis faire de même avec les carottes. Faire une purée grossière avec des morceaux.

Une fois les épinards cuits 10 minutes, ajouter les pommes de terre et les carottes en purée. Bien mélanger, puis couvrir et cuire pendant 5 minutes.

Cooking the carrots & potatoes - Cuire les carottes et les pommes de terre 

1.Dans un grand faitout chauffé à feu moyen, mettre les pommes de terre, les carottes, et l’eau.
Faire bouillir pendant 45 minutes.
2. Retirer les carottes.
3. Faire bouillir les pommes de terre 15 minutes de plus.
4. Peler les pommes de terre lorsqu’elles sont refroidies.
5. Écraser les pommes de terre et les carottes à la fourchette.

Cooking the spinach - Cuire les épinards 

1. Dans une sauteuse chauffée à feu moyen, faire sauter les oignons dans l’huile d’olive
pendant 3 minutes.
2. Ajouter l’assaisonnement à légumes et cuire 3 minutes.
3. Ajouter les tomates et cuire 5 minutes.
4. Ajouter les épinards et cuire 10 minutes.
5. Ajouter les pommes de terre et les carottes écrasées.

    I must’ve been ogling this recipe (every few days, like clockwork) ever since it was posted and I finally gave it a try today. Let me reiterate the sentiments in all the other comments and say it was amazing! I’ve been living off lentils and various beans for a few months so the change was welcomed by my appetite with open arms.

    Just a quick question – if I make an extremely large batch of this, do you think it’d be as delicious (or close enough) if I were to freeze them in small tupperware and defrost it whenever I want. I think it’d make great lunchbox wraps! I think I may even offer it at the next foodie gathering I attend :)

    I know it might be a little hard with Somali food, but more veggie recipes, please!

    Ok – one of my quick recipes is Maraq (tend to do this on lazy day’s lol)
    I use lamb shoulder, add Maggi cube and onions. When meat has browned a bit, I add garlic, carrots, potatoes, tomatoes, Parsnips and then leave it for a few minutes, then add one de-seeded Jalapeno and finally broccoli at the end. It comes out amazing and we usually have it with rice or Tiger Bread. I don’d add any spices to this as I don’t think its needed – but its up to you! you can also use whatever veg you have!
