Eid Cookies (Buskud) Biscuits de l’Eid

 

We call these Eid cookies because my mother (Abdullahi’s) used to bake them every Eid back home in Mogadishu, Somalia. On the night before Eid, we would be sent to the neighbourhood bakery to bring a dozen or so cookie sheets. My mother would mix the cookie dough and we would help pressing the cookies onto the cookie sheets. Then it was back to the bakery where the cookies would be baked. We were given stern instructions to make sure that the cookies don’t get burned by the extremely busy bakers.

My mother would make several large bags of cookies to be delivered to relatives. This meant several trips back and forth but the excitement of the Eid and the new clothes and shoes made it all fun.

We did not have coloured sugar, cellophane bags, or fancy ribbons. The cookies were decorated with chocolate dough and they had more sugar than the ones in this recipe. The coloured sugar was our idea to make the cookies more festive-looking, but they are also great without the additional sugar.

 

Nous les appelons Biscuits de l’Eid parce que ma mère (la mère d’Abdullahi) les cuisinait pour chaque Eid à la maison à Mogadishu, Somalie. La nuit avant l’Eid, nous étions envoyés en mission à la boulangerie du quartier pour rapporter une douzaine de plaques à gâteaux. Ma mère mélangeait la pâte à gâteaux et nous l’aidions à mouler les gâteaux sur les plaques. Puis retour à la boulangerie où les gâteaux étaient alors cuits. Nous avions pour instruction stricte de d’assurer que les gâteaux ne soient pas trop cuits par les pâtissiers débordés.

Ma mère faisait plusieurs grands sachets de gâteaux pour envoyer à la famille. Cela représentait des allers retours mais l’agitation de l’Eid et les nouveaux habits et nouvelles chaussures que nous recevions les rendaient excitants.

Nous n’avions pas de sucre coloré, de sachets en papier cristal, ou de jolis rubans. Les gâteaux étaient décorés avec une pâte au chocolat et ils contenaient plus de sucre que ceux de notre recette. C’était notre idée d’utiliser du sucre coloré pour que les gâteaux aient l’air plus festif, mais ils sont aussi très bons sans le sucre ajouté.

 

 

Ingredients: 

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements

1¼ cups (250 g) Granulated sugar
5¼ cups (750 g) All-purpose (plain) flour
2 cups (454 g) Unsalted butter (softened)
2 Eggs (Large)
1 Tbsp (15 mL) Pure vanilla extract
1 tsp (5 mL) Salt
1 Tbsp (15 mL) Lemon juice
Zest of 1 lemon
1 Tbsp (15 mL) Cocoa powder

Coloured/Flavoured sugar

2 koob (454 g ama nus kiilo wax yar dhimman) Buuro aan cusbo lahayn
2 Ukun (waaweyn)
1 QW (15 mL) Vanilla aan aalkolo lahayn
1 qy (5 mL) Cusbo
1 QW (15 mL) Liin dhanaan
1 Liin dhanaan qolofteeda oo la-xoqey
1 QW Kakaaw (‘Cocoa Powder’)
Sokor midabbo kale duwan leh iyo sokor carafta liinta leh

Ingrédients:

(cs est cuillère à soupe; cc est cuillère à café)
(1 mesure = 237 mL = 2.4 dl; 1 cs = 15 mL ; 1 cc = 5 mL); mesures à ras

1¼ (250 g) de Sucre en Poudre
5¼ (250 g) de Farine Blanche
2 mesures (454 g) de Beurre Doux (ramolli)
2 Oeufs (Gros)
1 cs d’extrait de vanille
1 cc de Sel
1 cs de Jus de Citron
Zeste d’1 citron
1 cs de Cacao en Poudre
Sucre coloré/parfumé

 

Directions:

Zest 1 lemon then juice it. Put the sugar and softened butter in the mixer and beat on high speed for 5 minutes. Scrape the sides once during those 5 minutes. 

Add the eggs, vanilla extract, lemon juice, salt, and the lemon zest. Mix on high speed for another 5 minutes.

Lower the speed and add the flour. Mix on low for a minute, then scrape the sides. Mix for another minute. 

Preheat the oven to 375°F/190°C and lightly oil the cookie sheets.

To shape the cookies, use Ateco or Wilton decorating tips. To press the cookies we used a closed star tip #849. For the chocolate accent, we used a smaller tip, the Wilton #1M. When pressing the cookies it is important to note that you should press once only for each cookie. Use the cookie dough as soon as you finish mixing it, otherwise it will tend to dry out a little making it more difficult to press the dough through the decorating tips.

If you find it difficult to use the decorating tips, then use a cookie press. However, the cookies will not be as pretty.

Bake the cookies at 375°F/190°C for 15 to 16 minutes. Store them in an airtight jar after they cool down.

 

Instructions:

Râper le zeste d’un citron puis presser le jus. Mettre le sucre et le beurre ramolli dans le mixer et battre à vitesse rapide pendant 5 minutes. Racler les bords une fois pendant ces 5 minutes.

Ajouter les oeufs, l’extrait de vanille, le jus de citron, le sel, et le zeste de citron. Mélanger à vitesse rapide 5 minutes de plus.

Réduire la vitesse et ajouter la farine. Mélanger à vitesse lente pendant une minute, puis racler les bords. Mélanger encore une minute.

Préchauffer le four à 375°F/ 190°C et huiler légèrement les plaques de cuisson.

Pour faire les gâteaux, utiliser les douilles à décor Ateco ou Wilton. Pour former les gâteaux nous avons utilisé la douille en étoile fermée #849. Pour le coeur en chocolat, nous avons utilisé une douille plus petite, la Wilton #1M. Lorsque vous pressez les gâteaux, veillez bien à ne presser qu’une seule fois pour chaque biscuit.

Utilisez la pâte dès que vous avez fini de la pétrir, sinon elle aura tendance à sécher, ce qui la rendra difficile à presser à travers les douilles.

Si vous ne maîtrisez pas l’utilisation des douilles, utilisez une presse à biscuits. Mais les biscuits ne seront pas aussi jolis.

Cuire les gâteaux à 375°F/190°C pendant 15 à 16 minutes. Les conserver dans une boite hermétique une fois qu’ils ont refroidi.

6. Diminuer la vitesse et ajouter la farine
7. Mélanger à vitesse lente et racler les bords
8. Mixer une minute de plus
